NOTHING is more satisfying than digging into a delicious dessert after having a scrumptious meal.
But after prepping a meal, one often doesn’t feel energised enough to also tackle a dessert.
Below are some easy recipes that only take 10 minutes or less to create:
• Chocolate chip cookie in a mug
Ingredients
2 tablespoons butter
2 tablespoons sugar
1 tablespoon light brown sugar,
1 egg,
¼ teaspoon pure vanilla extract,
4 tablespoons all-purpose flour
¼ teaspoon baking powder
Pinch of salt
2 tablespoons chocolate chips.
Directions
In a large mug, melt the butter in the microwave – about 15 to 30 seconds. Add in the sugar as well as the light brown sugar and stir to combine.
Next, add the egg and vanilla extract and whisk together.
Add the flour, baking powder and salt and stir to combine.
Continue by stirring in the chocolate chips.
Finally, put the mug in the microwave and heat for about 1 to 2 minutes until cooked. Another way to check is to insert a toothpick into the center and make sure it comes out clean.
Once cooked throughout, serve immediately and enjoy.
• Mug cake for one
Ingredients
4 Graham crackers
2 tablespoons all-purpose flour
2 tablespoons granulated sugar
2 teaspoons baking powder
¼ teaspoon salt
¼ cup whole milk
1 large egg
1 ounce milk chocolate, chopped
¼ cup marshmallow fluff or two jumbo marshmallows.
Directions
Place the Graham crackers in a plastic bag and use a rolling pin to crush them into fine crumbs.
Whisk the flour, two tablespoons Graham cracker crumbs, sugar, baking powder and salt in a large bowl.
Add the milk and egg and whisk to combine.
Transfer to a microwave-safe mug. Microwave the mixture on medium for 2 minutes.
Arrange the chocolate on the surface of the cake and microwave until the chocolate is melted, about 1 minute.
Top with the marshmallow or fluff. If desired, place under the broiler until marshmallow browns. Top with the remaining Graham cracker crumbs.
• Peanut butter bars
Ingredients
1 ½ cup brown sugar
1 ¾ cup powdered sugar
10 tablespoons butter – room temperature, divided
1 ½ cups peanut butter
1 cup milk chocolate chips or semi-sweet chocolate chips.
Directions
Line an 8-inch or 9-inch square pan with aluminum foil.
In a large bowl, cream 5 tablespoons butter, brown sugar, and powdered sugar until smooth.
Stir in peanut butter. Mix well and press into prepared pan.
In a small, microwave-safe bowl, heat chocolate chips and remaining five tablespoons butter for 1 minute.
Stir carefully and continue to microwave in 30-second increments until smooth, stirring after each increment.
Pour over peanut butter crust and spread evenly.
Chill until completely firm, at least 3 hours or overnight.
Let stand 10 minutes at room temperature before serving. Store leftovers in the refrigerator.
