
Mom always told you to eat your beans, but is there anything you can do to make them taste better?
Try these creative recipes:
Lemon-Sauteed Green Beans

Steam some green beans for 3 minutes and then sauté in a bit of olive oil along with a teaspoon of lemon zest, half a teaspoon salt and a quarter teaspoon black pepper. Sauté for about 3 minutes until the beans are hot and cooked tender-crisp. Squeeze half a lemon over the beans and serve immediately.
Caramelised Spicy Green Beans

Boil the green beans in salted water for one minute, drain and plunge them into ice water to stop the cooking process. Drain well and press the beans between paper towels.
Sauté the green beans along with sliced red bell pepper and half an onion in hot peanut oil for about 5 minutes until the beans look blistered.
Sprinkle with salt, remove from heat and stir in the following mixture: 2 tablespoons brown sugar, 1 tablespoon soy sauce and half teaspoon dried crushed red pepper.
Green Beans and Minced Meat Stir Fry

Fry 1 cup of fatty pork mince or tiny bacon bits until slightly browned, remove from pan.
Add another 1 tablespoon of cooking oil and fry 2 garlic cloves, 1 tablespoon minced ginger and 3-5 fresh Thai peppers. Add 500g chopped beans and fry 3 minutes until softened.
Return the meat to the pan, add 2 tablespoons light soy sauce and pinch of salt. Simmer until all the sauce has evaporated.
South Indian Green Beans Poriyal

Cut green beans into small pieces. Heat oil in a non stick pan and add 1 teaspoon mustard seeds until they begin to splutter. Add 6-7 curry leaves and 1 finely chopped onion and sauté for a few minutes. Add the beans, cover the pot with a lid and simmer until the beans have changed colour and are cooked through. Add 2 teaspoons red chili powder, half teaspoon turmeric powder, a quarter cup fresh grated coconut and salt to taste. Stir well and cook a further 3 minutes. Serve hot.
