Delicious cauliflower ideas for Sunday lunch

Does the idea of pinkish, smelly and floppy (totally overcooked) cauliflower makes you want to run for the hills?

Believe it or not, cauliflower can actually be one of the yummiest veggies on your Sunday lunch plate.

But then you have to repeat these words slowly: NEVER COOK CAULIFLOWER!

Try these ideas to make your cauliflower dish an absolute winner:

1. Caramelised cauliflower

• Preheat oven to 220C.

• Toss fresh cauliflower florets, sliced onion, thyme sprigs and a few garlic cloves into a baking pan.

• Toss the veggies in some olive oil and season with salt and ground pepper.

• Roast it in the oven, occasionally tossing the veggies, for about 35 minutes.

• Mix in a handful of grated parmesan cheese and roast until the cauliflower is deeply golden around the edges and even dark brown in some places.

• Serve immediately.

2. Whole roasted cauliflower

• Boil a whole cauliflower head for 10-15 minutes, drain and pat dry.

• Pour over a generous amount of olive oil, salt and pepper.

• Roast it in a very hot oven for an hour or until deeply golden.

• Serve immediately.

3. Tandoori cauliflower

• Maranade cauliflower florets in a mixture of Greek yogurt, crushed ginger, crushed garlic, Garam masala, red chilli, turmeric, lemon juice, oil and salt for three hours.

• Place them on a baking sheet and roast for half an hour until golden and soft, turning occasionally.

4. Cauliflower bacon and cheese bites

• Cook cauliflower florets for 5-10 minutes, drain and pat dry.

• Spread them out in a baking tray and toss with olive oil, salt, pepper and garlic powder.

• Using a potato masher, or the bottom of a small glass, lightly smash the cauliflower florets.

• Top each smashed cauliflower floret with a pinch of cheddar cheese and some bacon, then bake until cheese is melted and crispy around the edges – about 15 minutes.

• Sprinkle chives over cauliflower and serve warm or at room temperature.
