
TODAY is National Lasagne Day, which means it is time to go Italian in the kitchen.
Lasagne is a popular pasta dish, which has multiple layers of lasagne strips with generous portions of tomato sauce, cheeses, and sometimes mince and/or Italian sausage.
Here is an easy recipe to make the cheesy meal.
Ingredients
• One packet of lasagne
• 500 grams of lean mince
• One can of tomato and onion mix
• One can of whole tomatoes
• One tablespoon of freshly chopped parsley
• One garlic clove
• ½ tsp oregano
• Half an onion
• 1/8 tsp of white sugar
• 1½ tsp of dried basil
• 1½ tsp of salt
• 500 grams cottage cheese
• Three eggs
• ¾ cup grated Parmesan cheese
• 2 tsp salt
• ¼ tsp ground black pepper
• 500 grams of mozzarella cheese.

Directions
Preheat oven to 190°C.
Bring a large pot of lightly salted water to a boil.
Add lasagne and cook for 8 to 10 minutes or until al dente; drain and set aside.
Place mince in a large, deep skillet.
Cook over medium high heat until evenly brown.
Stir in tomato and onion mix, crushed tomatoes, parsley, garlic, oregano, onion, sugar, basil and salt.
Simmer over medium-low heat for 30 minutes, stirring occasionally.
In a large bowl, combine cottage cheese, eggs, Parmesan cheese, parsley, salt and pepper.
Place two layers of noodles on the bottom of a baking dish; layer half of the cheese mixture, ½ of the mozzarella cheese and ½ the sauce; repeat layers.
Cover with aluminium foil and bake in preheated oven for 30 to 40 minutes.
Remove foil and bake for another 5 to 10 minutes; let stand for 10 minutes before cutting; enjoy.
