Honey garlic butter roasted carrots

Honey garlic butter roasted carrots

• Wash and cut the carrots lengthwise in quarters, keeping them attached near the base of the stem.
• Melt 5 tablespoons of butter, add garlic and cook for 3 minutes without burning the garlic.
• Remove from the heat and stir in 2 tablespoons of honey. Arrange carrots on a prepared baking sheet and brush them with the honey garlic sauce, making sure they are evenly coated.
• Sprinkle salt and pepper.
• Bake for 15 minutes until the carrots are tender. Serve with freshly chopped parsley.

Curried Roasted Carrots

• Slice the carrots diagonally into thirds.
• Toss the cut carrots with 3 tablespoons extra virgin olive oil, a half teaspoon of salt and 1 tablespoon curry powder.
• Roast in a hot oven, turning a few times to brown evenly, until tender and caramelised.
• Toss the carrots with 1 tablespoon honey and serve.

• Whisk together 1/8 cup balsamic vinegar and 1/8 cup honey.
• Peel and slice about 6 carrots (equal size) in half horizontally. Cook them until slightly flexible.
• Grill the carrots on medium high for three minutes.
• Flip them over, brush them with the glaze and continue grilling another three minutes.
• Remove the carrots to a platter and brush them with the remaining glaze.

• Roast in an oven for 30 minutes, stirring every 10 minutes to prevent burning.
• Garnish with chopped parsley and crumbed feta or goats cheese.
